Bremerton 2005 Selkirk ShirazLanghorne Creek, South Australia
Selkirk is a blend of several parcels of Shiraz picked throughout the 2005 vintage based on phenological ripeness. The fruit was fermented in open vats for between six and ten days with twice daily cap management and temperature control. The parcels are then pressed at 0 baume and transferred to barrel for malolactic fermentation. The wines were then matured for 15 months in 30% new, 25% 2nd use, 25% 3rd use and 20% 4th use American oak barriques. Post oak treatment, the selected parcels of Shiraz were blended to create a richly flavored Shiraz style with ripe fruit expression and defining tannin profile. This wine was bottled without fining and with minimal filtration. The winemaker is family member Rebecca Willson.
A deep, vibrant crimson color with a bouquet that offers distinctive varietal characters, of pepper, rich berry fruits and a hint of sweetness. A layered, well-balanced palate structure jam packed with blackberry and chocolate leads into a persistent finish enhancing the rich flavors with touches of spice. Although drinking well now, it will develop with bottle age for another 4 to 5 years. The Selkirk matches well with Mediterranean foods, cheeses, red meat and game or it works very well with a dessert such as tarte tatin.

90 The red wines begin with the 2005 "Selkirk" Shiraz which was sourced entirely from estate fruit. The wine was aged for 15 months in American oak, 30% new. Purple-colored, it offers a fragrant bouquet of smoke, tobacco, pepper, and blueberry. This leads to a full-bodied, supple-textured wine with ample black fruit flavors, soft tannins, and an elegant personality. It has enough stuffing to evolve for 6-8 years but it can be enjoyed now.
