Pepper Crusted Ahi Tuna

If you want a quick meal that makes you look like a professional chef sear some ahi tuna steaks. Make sure you buy the freshest piece of ahi possible; the fresher the fish the better the taste. The middle of the ahi tuna will remain pink so don't think it’s undercooked. An easy way to crush the peppercorns is to simply place them in a heavy plastic bag and using a meat tenderizer crush the peppercorns. The more crushed peppercorns the hotter the dish. This dish can easily be served with a bold red wine due to the spiciness of the preparation. The Syan Reserve Shiraz would work extremely well with its full-bodied seductive palate which is rich and concentrated and packed with chunky jammy dark berry fruits and tantalizing undertones of freshly cracked pepper and vanillan oak.

Lemongrass and Citrus Poached Salmon with Teriyaki Stir Fried Vegetables

Salmon is a good reason to open a bottle of Pinot Noir, a pairing that is now a classic. This is a very light and delicate dish with a smooth and subtle lemon and citrus flavor that working beautifully with the Centennial Reserve Pinot Noir with its full palate of cherry, raspberry and spice with some very intense palate depth.. Malaysian Lime-Coconut Swordfish

Lemongrass gives a characteristic citrus flavor and fragrance to many Asia dishes. You'll find this herb with long thin gravy-green leaves in the produce section of many supermarkets. You can substitute grated lemon peel, but cut the amount by half. The Jinks Creek Pinot Noir will complement this dish with its full palate of cherry, raspberry and spice and very intense palate depth.

Chutney Glazed Fish

This is a lovely flavorful fish course that is quite easy to prepare. This course needs a wine that has good acid structure so I recommend the Matilda Plains Sauvignon Blanc with its wonderfully zesty fresh aromas balanced by a lively palate displaying a touch of green apple and citrus and crisp refreshing finish.
